This site has quite a few good tutorials which might be of interest. Particularly the Getting Started tutorial, if you have not read this already, is good for learning the basics.

There are many other good papier mache sites on the net which I'm sure you'll find useful available in the links section. For books, take a look at the book shop which contains user reviews etc.

I'm not too sure on course advice but I'm sure someone more qualified will be able to help you on this matter.
