I just started paper mache art last July, so I'm still experimenting with using many different techniques. On this particular one I did use a mold; I modeled only the face with pottery clay and made a latex rubber mold from it. I then cast paper mache clay into the mold. The rest of the head and body were papermache clay on a wire and crushed paper/aluminum foil armature.
I suppose I could cast more faces from the rubber mold, but my intention is to make single pieces. I think I will just use molds in areas of the sculpt where I want fine detail. So, to answer your question...I use molds to make individual pieces.
