I have recently come across a webshop selling venitian style masks, and in their techniques section the give a description of making a chalk mold from their clay master instead of a plaster one. Could anyone point me towards how this works or offer a link to a step by step guide. Their work is fabulous and I would dearly love to emulate the style.

I would strongly suspect "chalk" is a poor translation for of an idiomatic term for plaster.
Though it does make me think perhaps wetted chalk would make a weakly bonded plaster that could be reused.

My first thought was the same, plaster.
But looking at that mask site, I am thinking that they carve the form from an air-drying clay, then apply papier mache over it. I suspect that the term "chalk" is what they call the clay when it is dry. (This is just a guess, mind you!) And I don't know enough about clay to even guess what it might be called.
There is a nice book called "Mask Making" by Glynn McKay (an Englishman) by Chartwell Books (1994) which has nice step-by-step instructions & photos.

I confirm. The italian word "Gesso" can mean both "chalk" and "plaster".
